Fish Mexicano
- 1 lb red snapper fillets, Rock fish is also very good or 1 lb similar fish
- 3 tablespoons vegetable oil
- 12 cup chicken broth
- 1 small onion, sliced
- 4 -6 finely minced garlic cloves
- 3 small tomatoes, sliced
- 2 -3 pickled jalapeno peppers, sliced
- 12 teaspoon oregano
- 2 small bay leaves
- 6 small green olives, pitted and crushed plus 6 whole
- 1 tablespoon capers
- 3 tablespoons fresh minced parsley
- salt
- Place oil into a large frying pan heat to medium high heat ,place fish in pan sear on both sides, push fish to edge of pan and add the chicken broth then add the garlic, onions, bay leaves and oregano, stir for a couple of minutes then add the tomatoes,crushed olives, chiles and capers simmer for 15 minutes before serving add whole olives and sprinkle with parsley and add salt if needed.
- serve with rice and tortillas.
