Asparagus And Tomatoes With Herb Vinaigrette Recipe
- 1 lb Fresh asparagus
- 1/3 c. Extra virgin olive oil
- 1/4 c. Red wine vinegar
- 1 Tbsp. Minced fresh chives
- 2 tsp Dry oregano, crushed
- 1/4 tsp Salt
- 1/4 tsp Pepper
- 4 x To 6 plum tomatoes, sliced Minced fresh chives
- Snap off tough ends of asparagus.
- Cook in boiling water to cover 2 min or possibly till crisp-tender; drain.
- Plunge into ice water to stop the cooking process; drain.
- Cover and refrigerate3 hrs.
- Whisk together extra virgin olive oil and next 5 ingredients.
- Drizzle over asparagus and tomato slices; garnish with fresh chives, if you like.
- Yield: 4 servings
