Ratatouille & Goat Cheese Salad Towers with Creamy Balsamic Dressing

  1. Combine spread and dressing until smooth.
  2. Refrigerate until needed.
  3. Can be prepared up to 3 days in advance.
  4. Brush 1-1/2 cups dressing mixture (or 6 Tbsp.
  5. dressing mixture for trial recipe) evenly onto both sides of eggplant, zucchini, onion and yellow pepper slices.
  6. Grill on medium-high heat 2 to 3 min.
  7. on each side or until crisp-tender.
  8. Place in single layer in sheet pan(s), being careful to keep onion slices intact.
  9. Refrigerate until ready to use.
  10. For each serving: Place 1 eggplant slice on serving plate; cover with 3 zucchini slices, 1 tomato slice and 1 onion slice (keeping slice intact).
  11. Top with 1 yellow pepper piece, 1 cheese slice, second eggplant slice and second tomato slice.
  12. Gently press down on top tomato slice to secure tower.
  13. Season with 1/8 tsp.
  14. (0.5 mL) each salt and black pepper.
  15. Sprinkle with 1/2 Tbsp.
  16. (7 mL) basil.
  17. Drizzle with 1 Tbsp.
  18. (15 mL) of the remaining dressing mixture.
