White Chocolate Mousse With Kiwifruit

  1. Melt chocolate au bain marie.
  2. Mix flour with 2 tbsp water and add to molten chocolate; stir thoroughly on low heat until mixture starts to thicken.
  3. Cool rapidly in a cold water bath while stirring occasionally.
  4. Add rum.
  5. Whisk egg whites with sugar until stiff.
  6. Fold in chocolate mixture.
  7. Put in coupes and allow to set in refrigerator (min.
  8. 2 hrs).
  9. Clean kiwifruit and slice thinly.
  10. Serve mousse decorated with kiwifruit slices.
