Mousetraps

  1. Preheat a grill on medium-high heat.
  2. Place toast, in a single layer, on a baking tray.
  3. Top with ham.
  4. Beat egg yolks in a bowl until well combined.
  5. Stir in cheese and season with salt and pepper.
  6. Using an electric mixer, beat eggwhites in a clean, dry bowl until stiff peaks form.
  7. Stir half the eggwhites into cheese mixture.
  8. Using a large metal spoon, gently fold in remaining eggwhites.
  9. Spoon mixture over ham.
  10. Place mousetraps under hot grill.
  11. Cook for 3 to 4 minutes or until egg mixture is golden and cooked through.
  12. Serve.
