Mashed Ginger Sweet Potatoes
- 1-1/2 lb. sweet potatoes (about 3), peeled, quartered
- 2 Tbsp. grated gingerroot, divided
- 2 Tbsp. KRAFT Zesty Italian Dressing
- 1/2 cup finely chopped onions King Sooper's 1 lb For $0.99 thru 02/09
- 1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream
- 1 Tbsp. brown sugar
- Cook potatoes and 1 Tbsp.
- ginger in boiling water in large saucepan 10 min.
- or until tender.
- Drain in colander.
- Heat dressing in same saucepan on medium-high heat.
- Add onions and remaining ginger; cook and stir 5 min.
- Add potatoes; mash lightly.
- Stir in remaining ingredients; cook on medium heat until heated through, stirring occasionally.
