Potato Salad with Coriander and Anchovy

  1. Cut the potato and carrot into small pieces and put them into a microwavable container.
  2. Heat for 3 minutes until the vegetables get soft.
  3. You can boil them if you like too.
  4. Mash the potatoes roughly.
  5. Add the chopped anchovy and season with salt and pepper and mayonnaise.
  6. Mix all together.
  7. Finally, pour in the olive oil and add the chopped coriander.
  8. Mix gently and the salad is done!
