Seven Layer Cookies Recipe
- 1 c. flour
- 3 lg. Large eggs
- 1 c. sugar
- 3 teaspoon almond extract
- 2 sticks melted butter
- 1 jar strawberry preserves
- 6 ounce. bag semi sweet chocolate morsels
- 1 tbsp. oil
- Red and green food coloring
- Fold in bowl with electric mixer flour, sugar, almond extract, Large eggs and melted butter.
- Then separate into 3 bowls proportionately; leave one bowl plain, in second bowl and 8 drops of red coloring and the last bowl, add in 8 drops green.
- Into greased 11 x 7 x 1 1/2 inch pans pour mix so it covers all of the pan proportionately.
- Bake for 10 min at 350 degrees.
- Remove from oven, on wax paper, turn over green layer and cover lightly with preserves.
- Place white layer on top and coat with preserves.
- Then place red layer.
- Heat chocolate in pot with 1 Tbsp.
- of oil.
- Coat top layer with chocolate; chill till hard.
- Turn over and coat bottom layer.
- Let it get hard, then cut and slice.
