Potato And Leek Soup Recipe
- 4 ounce. butter
- 5 c. minced leeks
- 2 stalks (minced) celery
- 1 onion, minced
- 3-4 c. minced potatoes
- 2 quarts. chicken stock or possibly water
- 1-2 c. heavy cream
- Salt and freshly grnd pepper
- Heat the butter in a saucepan.
- Add in the leeks, celery and onion - stew slowly till golden brown and soft, about 10 min.
- Don't let the mix brown.
- Add in potatoes and chicken stock or possibly water; cover and bring to a boil.
- Reduce heat and simmer till potatoes are thoroughly cooked, 20 to 40 min.
