Potato And Leek Soup Recipe

  1. Heat the butter in a saucepan.
  2. Add in the leeks, celery and onion - stew slowly till golden brown and soft, about 10 min.
  3. Don't let the mix brown.
  4. Add in potatoes and chicken stock or possibly water; cover and bring to a boil.
  5. Reduce heat and simmer till potatoes are thoroughly cooked, 20 to 40 min.
