Spicy Grilled Shrimp
- 12 cup sugar
- 1 teaspoon lime zest, finely grated
- 14 cup fresh lime juice (about 3 or 4 limes)
- 1 tablespoon asian chili paste
- 1 tablespoon asian fish sauce
- coarse salt
- safflower oil, for brushing
- 3 lbs large shrimp, peeled (about 36)

- wooden skewer
- Soak skewers for about 30 minutes while preparing shrimp.
- Bring sugar and lime juice to a simmer in a small saucepan, cook, stirring, until sugar dissolves, about 2 minutes.
- Remove from heat and stir in the zest, chili paste, and fish sauce; season with salt.
- Heat grill to high heat; brush grates with oil.
- Thread 3 shrimps per skewer and season with a little salt; divide sauce, in half, into 2 bowls (one will be for brushing shrimp as it cooks, the other is for serving).
- Grill shrimp 1 minute, brush with sauce; turn, grill an additional minute, brush with sauce.
- Continue grilling until shrimp is cooked through and opaque, 1 to 3 minutes more.
- Serve with reserved sauce.
