Cheeseburgers with Crispy Onions and Horseradish Sauce

  1. Heat the vegetable oil.
  2. Add the onion slices and lower heat to medium.
  3. Stir the onions every minute or so for about 30 minutes, until onions are browned (watch closelythey can burn quickly).
  4. Drain on paper towel well and lightly salt.
  5. Mix together the lemon juice, mayo, yogurt, and horseradish together.
  6. Set aside to top completed burgers.
  7. Heat grill to medium-high.
  8. Mix the meat lightly with the olive oil and salt and pepper until just combined.
  9. Form into 4 equal patties.
  10. Make an indentation in middle of each burger to ensure even cooking.
  11. Cook burgers for about 6 minutes per side.
  12. Turn grill off and add cheese to burgers.
  13. Also place buns on grill to lightly toast.
  14. Close grill and leave for 1 minute.
  15. Remove buns and burgers.
  16. Allow burgers to rest for at least 5 minutes and then assemble.
  17. Start by adding 1 tablespoon of sauce on bottom of each burger bun.
  18. Top with burger and onions.
  19. Enjoy!
