Golden Autumn Soup (Low Fat)

  1. In a large pot, combine broth, cauliflower, carrots, and onions.
  2. Bring to a boil.
  3. Reduce heat and simmer 7 to 10 minutes, until vegetables are tender.
  4. Puree in a blender or food processor.
  5. Return to pan.
  6. Add milk and heat thoroughly, but do not boil.
  7. Stir in nutmeg and pepper.
