Plum Cake
- 2 13 cups self-rising flour
- 2 cups white sugar
- 1 cup cooking oil
- 3 eggs
- 12 teaspoon cinnamon
- 12 teaspoon clove
- 1 cup pecans, chopped
- 2 (128 ml) jarsstrained plum baby food
- 1 cup icing sugar
- lemon juice, to thin (about 1 lemon)
- Pour all ingredients in a bowl; mix well with a spoon.
- Pour into a well-greased tube or bundt pan.
- Bake in a 350F oven for about an hour.
- Test to see if done.
- A few minutes more may be required.
- Cool in the pan for about 10 minutes.
- Run a knife around the edge and then leave in the pan for awhile longer.
- Turn out onto a plate.
- ICING: Combine icing sugar and lemon juice; pour over cake.
