chicken croquettes

  1. preheat oven to 350 degrees
  2. cut cooked chicken into large chunks.
  3. place into a food processor and process until finely chopped.
  4. pour broth, potatoes, thyme, pepper, salt and onion powder into a medium saucepan and bring to a boil.
  5. cover and reduce heat to medium-low and cook until potatoes are tender, about 7 minutes.
  6. with a slotted spoon, remove potatoes to a large bowl.
  7. mash with a fork and set aside.
  8. keep broth if needed.
  9. in a medium bowl, combine chicken and parsley.
  10. stir in mashed potatoes.
  11. divide chicken mixture into 10 equal portions and shape into cone-shaped croquettes.
  12. if mixture is dry, add broth until they hold their shape.
  13. if using egg, dip each croquettes in egg white and then in bread crumbs.
  14. place croquettes on sprayed baking pan and bake 20- 30 minutes until golden brown.
