chicken croquettes
- 16 oz cooked boneless skinless chicken breast
- 1 cup fat free chicken broth
- 16 oz red potatoes, unpeeled, diced into 1/4 inch pieces
- 3/4 tsp thyme
- 1/4 tsp pepper
- 1 tsp salt
- 1/2 tsp onion powder
- 2 tbsp chopped parsley
- 1 cup seasoned bread crumbs
- 2 beaten egg whites (optional)
- preheat oven to 350 degrees
- cut cooked chicken into large chunks.
- place into a food processor and process until finely chopped.
- pour broth, potatoes, thyme, pepper, salt and onion powder into a medium saucepan and bring to a boil.
- cover and reduce heat to medium-low and cook until potatoes are tender, about 7 minutes.
- with a slotted spoon, remove potatoes to a large bowl.
- mash with a fork and set aside.
- keep broth if needed.
- in a medium bowl, combine chicken and parsley.
- stir in mashed potatoes.
- divide chicken mixture into 10 equal portions and shape into cone-shaped croquettes.
- if mixture is dry, add broth until they hold their shape.
- if using egg, dip each croquettes in egg white and then in bread crumbs.
- place croquettes on sprayed baking pan and bake 20- 30 minutes until golden brown.
