Dutch Lettuce Recipe
- 1 pound lean salt pork, cut in 1/2 inch cubes
- 8 lg. potatoes, peeled, boiled
- 1 head lettuce, or possibly fresh leaf lettuce
- 6 hard boiled Large eggs
- 2 tbsp. cider vinegar
- 1 c. water
- Boil potatoes; drain and mash coarse.
- Cut pork into 1/2 inch pcs, fry till crisp.
- Take out and put on cut up lettuce, add in cut up Large eggs and potatoes.
- In the pork drippings, drain off half the lard; add in water and vinegar to pan and bring to a boil.
- Pour over the lettuce, pork, Large eggs and potatoes.
- Mix together.
- More vinegar can be added if you like.
