Vegan Roasted Acorn Squash
- 2 Acorn Squash, Halved And Deseeded
- 2 teaspoons Coconut Oil, For Brushing
- 1 dash Sea Salt
- 2 teaspoons Molasses

- Preheat oven to 400 degrees Fahrenheit.

- Place squash flesh side up in a roasting pan.
- 3.
- Brush the yellow-orange squash flesh evenly with coconut oil.
- 4.
- Sprinkle with salt.
- 5.
- Drizzle squash flesh evenly with molasses.
- 6.
- Place in preheated oven until flesh is very tender and can be easily removed with a fork, about one hour.
- 7.
- Remove flesh from skin using a fork once cool enough to handle.
- Use as a puree or in soups, baked goods, rice and stuffing dishes, etc.
