Almond Blondies
- 3/4 cup butter, softened, divided
- 1 cup packed brown sugar
- 1 egg, lightly beaten
- 1 tsp. vanilla
- 1 cup flour
- 1/2 tsp. Magic Baking Powder
- 1/3 cup butterscotch chips
- 1/4 cup granulated sugar
- 3/4 cup sliced almonds
- 1 pkg. (225 g) Baker's Semi-Sweet Chocolate
- Heat oven to 350 degrees F.
- Line 8-inch square pan with foil, with ends of foil extending over sides.
- Beat 1/2 cup butter and brown sugar in medium bowl with electric mixer until well blended.
- Add egg and vanilla.
- Add flour and baking powder; stir until blended.
- Stir in butterscotch chips.
- Pour into pan and spread evenly.
- Bake 20 to 25 min.
- or until a toothpick inserted in centre comes out clean.
- Meanwhile, combine remaining butter and granulated sugar in skillet on medium heat until butter is melted.
- Add almonds, stirring until coated with mixture; cook 5 min until almonds start to brown.
- Pour over squares; cool.
- Remove from pan by lifting out foil.
- Cut into squares.
- Melt chocolate according to package directions.
- Coat each square in chocolate by dipping the square, excluding the top, into the melted chocolate.
- Place on cooling rack to let chocolate harden before serving.
