Spicy Crusted Pork Chops with Hominy

  1. Mix mayo, cracker crumbs and 1/2 tsp.
  2. of the chile powder; set aside.
  3. Spray large skillet with cooking spray.
  4. Heat on medium-high heat.
  5. Add chops; cook 3 to 4 min.
  6. on each side or until browned on both sides and cooked through (160 degrees F).
  7. Meanwhile, heat dressing in medium skillet on medium heat.
  8. Add hominy; cook 5 min., stirring constantly.
  9. Add tomatoes and remaining 1/2 tsp.
  10. chile powder; cook 2 min.
  11. or until heated through, stirring occasionally.
  12. Remove from heat.
  13. Stir in half of the onions and the lime juice.
  14. Spread chops with mayo mixture; sprinkle with remaining onions.
  15. Serve with the hominy mixture.
