No-Cook Strawberry Kiwi 'Light' Jam
- 2-3/4 cups crushed strawberries Safeway 1 lb For $3.99 thru 02/09
- 1-1/4 cups peeled, finely chopped kiwifruit
- 3-1/4 cups sugar
- 1 box Certo Light Pectin Crystals
- MEASURE prepared fruit into a large bowl.
- Measure sugar and set aside.
- COMBINE fruit pectin crystals with 1/4 cup of the measured sugar.
- Gradually add to fruit, stirring well.
- LET stand for 30 minutes, stirring occasionally.
- ADD remaining sugar and continue to stir for 3 minutes until most of the sugar is dissolved.
- POUR into clean jars or plastic containers.
- Cover tightly with lids and let stand at room temperature until set (may take 24 hours).
- STORE in freezer, if used within 3 weeks jam may be stored in refrigerator.
