Horseradish and Beet Relish

• 2 cups diced
• julienne cooked beets
• 1/2 cup sugar
• 1/3 cup horseradish
• 2 tbsp. onion juice
• 1/2 cup vinegar

1. Pour all into saucepan, toss lightly and bring to a boil.
2. Serve hot or cold with meat or fish.
3. If served cold, allow to chill overnight.
