Chocolate-Bourbon Pecan Pie
- 1 each 9" Deep Dish Pie Crust
- 1 cup Pecans, Halves or Pieces
- 1/2 cup Sugar
- 1/2 cup Brown Sugar, Packed
- 1/2 cup Corn Syrup
- 1/4 cup Bourbon Whisky
- 1 tbsp Flour
- 4 each Eggs
- 1/4 lb Butter, Unsalted (1 Stick)
- 1/2 cup Semisweet (or bittersweet) chocolate chips
- Preheat oven to 350F
- Gently melt butter on stove top or in a microwave.
- When the butter is melted, but just before it simmers, add chocolate chips and stir until fully melted.
- Put pecans into pie crust and set aside.
- Combine sugars, corn syrup, bourbon, and flour in a bowl and combine thoroughly.
- Whisk in eggs, two at a time, untill fully incorporated.
- Slowly whisk in melted butter and chocolate until completely emulsified.
- Pour liquid mixture into pie shell.
- Bake the pie for 1 hr and 10 min, or until completely set in the middle.
- Allow to cool completely before slicing.
