Turkey Salad with Fruit
- 3 cups turkey cooked, cut up
- 3/4 cup green grapes sliced
- 11 ounces mandarin oranges segments, drained, 1 can
- 8 ounces water chestnuts sliced, drained
- 2 medium celery stalks sliced
- 2 large scallions, spring or green onions thinly sliced
- 23 cup peaches orange, or lemon yogurt, low-fat
- 2 tablespoons soy sauce, tamari
- 1 x mixed salad greens mixed
- Mix the turkey, grapes, orange segments, water chestnuts, celery and onions in a large bowl, blending well.
- Mix the yogurt and soy sauce, blending well.
- Pour over the turkey mixture and toss.
- Cover and refrigerate for about 2 hours or until well chilled.
- Serve on the salad greens.
