Homemade Pretzel Rolls for sandwiches

  1. In a large bowl mix yeast, water and sugar til yeast has dissolved.
  2. Let stand about 5 min or til bubbly.
  3. Add flour gradually until forming a soft ball that is neither sticky nor dry.
  4. Add extra flour if needed.
  5. Turn out onto clean work surface and knead til elastic and smooth about 3-4 min.
  6. Place dough into slightly oiled bowl.
  7. Let stand about an hour or til doubles in size.
  8. Preheat oven to 400F.
  9. Lightly oil a baking sheet or line with parchment paper.
  10. Bring water and baking soda to a baking soda to a rolling boil in a large saucepan over med-high heat.
  11. Punch dough down and turn out onto clean work surface.
  12. Separate into 8 even pieces, knead each til elastic and smooth.
  13. Shape into rolls.
  14. Drop rolls one at a time into boiling water for one minute, turning half way thru.
  15. Remove rolls using a slotted spoon.
  16. Put onto baking sheet.
  17. Repeat til all rolls are finished.
  18. Sprinkle with course salt.
  19. Using a serrated knife cut an X onto the top of each roll.
  20. Bake for 12-14 min or til golden brown.
  21. Remove from baking sheet and place on a wire rack to cool.
