Kabocha Muffins for Kabocha Lovers
- 100 grams Kabocha (Peeled)
- 80 grams Cake flour
- 60 grams Sugar
- 1 Egg
- 30 grams Butter (unsalted)
- 30 grams Raisins (optional)
- 2 tbsp Milk
- 1 tsp Baking powder
- 1/4 tsp Cinnamon powder
- Combine and sift the cake flour and baking powder.
- Beat the egg.
- Soften the kabocha until it can be poked thoroughly with a skewer.
- Preheat the oven to 180C.
- Add the butter to the still-hot kabocha and mash it with a spatula.
- When smooth, add the sugar and cinnamon powder and mix with a whisk.
- Stir in the egg and milk, then mix in the raisins.
- Add the cake flour and mix in with a rubber spatula.
- Pour the batter into muffin cups and bake for 20 minutes.
- When a skewer poked through the middle comes out clean, they're done.
- Remove from the moulds and let cool on a rack.
- Wrap each one individually when cooled.
