Garden Quinoa Salad

  1. Combine quinoa and water in large saucepan; bring to boil on medium-high heat.
  2. Reduce heat to medium-low; cover.
  3. Simmer 10 to 15 min.
  4. or until all liquid is absorbed.
  5. Cool.
  6. Add remaining ingredients; mix lightly.
  7. Cover.
  8. Refrigerate several hours before serving.
