Garden Quinoa Salad
- 2 qt. quinoa, uncooked
- 1 gal. water
- 2 qt. tomatoes, diced Safeway 1 lb For $1.29 thru 02/09
- 2 qt. cucumbers, diced
- 1 cup red onions, finely chopped
- 1 qt. BACK TO NATURE Organic Balsamic Vinaigrette
- 1 cup fresh basil, chopped
- Combine quinoa and water in large saucepan; bring to boil on medium-high heat.
- Reduce heat to medium-low; cover.
- Simmer 10 to 15 min.
- or until all liquid is absorbed.
- Cool.
- Add remaining ingredients; mix lightly.
- Cover.
- Refrigerate several hours before serving.
