Herb Baked Fish & Rice Recipe
- 1 1/2 c. warm chicken bouillon
- 1/2 c. regular rice, uncooked
- 1/4 teaspoon Italian seasoning
- 1/4 teaspoon garlic pwdr
- 1 (10 ounce.) frzn minced broccoli, thawed & liquid removed
- 1 1/2 c. Durkee French fried onions
- 1 teaspoon grated Parmesan cheese
- 1 pound fish fillets, unbreaded
- 1/2 c. Cheddar cheese, shredded
- In cake pan, combine bouillon, rice and seasonings.
- Bake covered at 375 degrees for 10 min.
- Top with broccoli, 1 c. French fried onions and Parmesan cheese.
- Place fish fillets diagonally; sprinkle fish lightly with paprika.
- Bake, covered, for 20 to 25 min or possibly till fish flakes with fork.
- Stir rice; top with Cheddar cheese and remaining onions and bake uncovered 3 min or possibly till onions are golden brown.
- Makes 3 to 4 servings.
