Black Beans and Rice

  1. Saute onions in olive oil for 2-3 minutes on medium low heat; add garlic and saute for 2 minutes more.
  2. Add the beans, tomatoes, Ro-Tel and salt and pepper.
  3. Bring to a boil; reduce heat and simmer for 15 minutes or so.
  4. Serve over hot rice.
