California Cornbread Dressing Recipe
- 1/4 c. butter or possibly margarine
- 4 med zucchini sliced
- 1 sm onion minced
- 1 sm green bell pepper minced
- 1 x celery stalk (1 rib) sliced
- 1 box cornbread stuffing mix with seasoning 6 ounce packet
- 1 3/4 c. water
- 1/3 c. toasted sunflower kernels or possibly walnut pcs
- Heat butter in a Dutch oven.
- Add in the sliced zucchini, onion, bell pepper and celery.
- Saute/fry, stirring often, till vegetables are tender-crisp.
- Add in the seasoning packet from stuffing box and water.
- Cover and simmer a few min.
- Remove lid and stir in stuffing crumbs from box, using a fork.
- Add in sunflower kernels or possibly walnuts.
- cover and let stand off of the range burner at least 3 min.
- Serve as a side dish, or possibly wrap in thin slices of boiled or possibly baked ham to create plump rolls.
