Pineapple-Ginger-Limeade Cooler

  1. Bring the first 5 ingredients to a boil, stirring until sugar dissolves.
  2. Decrease heat, and simmer 8 minutes.
  3. Remove from heat; let stand 1 hour.
  4. Pour pineapple mixture through a wire-mesh strainer into a big pitcher, discarding ginger.
  5. Stir in lime rind and rum.
  6. Serve over crushed ice.
