Peanut 'N Pineapple-Crusted Cod

  1. Preheat oven to 350F.
  2. Combine peanuts, pineapple and jalapenos; set aside.
  3. Line 15x10x1-inch baking pan with foil; spray foil with cooking spray.
  4. Place fish on prepared baking pan.
  5. Spread evenly with mayo; spoon 1/4 cup of the peanut mixture over each fish fillet, pressing peanut mixture into fish to secure.
  6. Bake 20 min.
  7. or until fish flakes easily with fork.
  8. Sprinkle with cilantro.
