Butterscotch Recipe
- 2 c. sugar (caster)
- 1/3 c. water
- 2/3 c. liquid glucose
- 1 tsp lemon juice
- 1/2 tsp salt
- Combine sugar, water glucose in heavy saucepan, stir over low heat till sugar is dissolved, brushing down sides of saucepan frequently with wet pastry brush to dissolve any sugar crystals.
- Bring to boil, reduce heat till very low (mix will still bubble), boil to 300F on a sugar thermometer (this will take about 15-20 min).
- Don't stir.
- Mix should be light golden.
- Remove from heat, add in minced butter and remaining ingredients, stir till well blended.
- Pour into lightly greased 30cm X 20cm lamington tin.
- Mark into squares while still warm.
- When cool, break into pcs.
