Tomato Salad
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 2 teaspoons lemon juice
- 1 garlic clove, crushed
- 12 teaspoon sriracha sauce
- 12 yellow pepper, chopped
- 2 tomatoes, rough chopped
- 1 avocado, diced
- 14 cup shallot, diced
- 12 cup canned artichoke heart, drained
- Combine first 5 ingredients in a non reactive bowl and lightly mix together.
- Add remaining ingredients.
- Toss and chill for at least 5 minutes.
