Vegetable Spoon Bread

  1. Preheat oven to 350F.
  2. Beat eggs lightly in large bowl.
  3. Add spinach, corn, sour cream and butter; mix well.
  4. Add muffin mix and cheese; stir just until muffing mix is moistened.
  5. Pour into greased 9x5-inch loaf pan.
  6. Bake 1 hour or until golden brown.
  7. Cool slightly.
