Chicken Mystery Hot Dish Recipe
- 1/4 c. butter
- 1/4 c. flour
- 1 pt. half and half
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 c. cubed cooked chicken
- 1 c. chow mein noodles
- 1/2 c. sliced or possibly slivered almonds
- 4 ounce. jar minced pimentos (liquid removed)
- 1 (4 ounce.) can mushroom stems and pcs, liquid removed
- 1 c. sliced celery
- 1 (8 ounce.) can sliced water chestnuts, liquid removed
- 2/3 c. mayonnaise mixed with 1 tbsp. lemon juice
- Heat butter in a medium-size heavy saucepan over low heat.
- Add in flour and stir till smooth.
- Let mix bubble about 3 min, stirring often.
- Gradually stir in half and half.
- Let simmer, stirring constantly, till thickens.
- Stir in salt and pepper.
- Remove from heat.
- Put remaining ingredients except sauce and mayonnaise in a baking dish.
- Stir in mayonnaise, then white sauce.
- Bake 30-40 min in 350 degree oven till warm and bubbly.
- Makes 6 servings.
