Berry-Glazed Salmon with Asparagus
- 3/4 cups Vegetable Broth
- 12 ounces, weight Asparagus Spears, Washed, Tough Ends Removed
- 12 ounces, weight Salmon Fillets
- 1/4 cups Berry Jam Preserves
- 1 Tablespoon Olive Oil
- 1 Tablespoon Red Wine Vinegar
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- Salt And Pepper, to taste
- Bring vegetable broth to a simmer in a large broiler-safe skillet.
- Add asparagus spears.
- Lay salmon fillets on top of spears and season with salt and pepper.
- Cover and simmer for 7-8 minutes.
- While the asparagus and fish are simmering, combine the ingredients for the glaze (preserves through paprika) in a small bowl and add salt and pepper to taste.
- Preheat the broiler in your oven.
- Remove skillet from the heat and spoon the glaze onto the salmon.
- Place skillet under broiler for about 2-3 minutes, or until glaze is bubbling.
- Serve immediately.
