Chinese Style Sauce
- 13 cup chicken stock
- 12 lb mushroom, sliced
- 12 cup sliced water chestnuts
- 4 scallions, sliced
- 3 tablespoons toasted sesame seeds, as garnish
- Heat chicken stock to boiling; add mushrooms, water chestnuts and scallions.
- Reduce heat and simmer, covered, about 5 minutes.
- Cook, uncovered, until liquid is almost evaporated, about 5 minutes.
- Spoon over chicken.
- Sprinkle with sesame seeds.
