Cauliflower Mash
- 1 large cauliflower, broken into florets
- 1 ounce butter or 2 tablespoons olive oil
- 2 -3 tablespoons soymilk
- 1 pinch salt and pepper
- 1 pinch grated nutmeg (optional)
- Bring 2 inches water to a boil in a large saucepan.
- Put in the cauliflower florets, bring back to a boil, cover and cook for 5-7 minutes, until the cauliflower is tender.
- Drain well.
- Put the cauliflower into a food processor with the butter or olive oil, soy milk and salt and pepper and grated nutmeg if using.
- Whiz until you get a smooth, thick consistency.
- Return to the saucepan and gently reheat, stirring so that it doesn't catch, then serve.
