Apple Cider Roasted Chicken
- 6 sprigs Green Onion, Chopped
- 1 teaspoon Poultry Seasoning
- 1 teaspoon Paprika
- 1 teaspoon Dill Weed
- 1/2 teaspoons Garlic Powder, Or To Taste
- 23 cups Butter Or Margarine
- 1 whole Roaster Chicken
- 2 cups Apple Cider Or Apple Juice
- Preheat oven to 425 degrees F. Combine all seasonings with softened butter or margarine.
- Prepare bird by discarding giblets and placing in a foil-lined baking pan.
- Next, push fingers up under the skin, creating space, then stuff butter all under the skin, in every nook and cranny you can get it in, flipping the chicken so that you can get seasoning under all sides.
- Then tie drumsticks together, place the chicken breast side down, and pour apple cider/juice under the skin, inside the chicken and all over it.
- Cook for about 2 to 2 1/2 hours for a 67 pound roaster, or until chicken reaches the safe internal temperature of 180 degrees F degrees.
