Vegetarian Dashi
- 1 small piece (4 to 5 square inch) kombu (dried, cultivated kelp or seaweed)
- 2 cups water
- 1 cup vegetable stock
- Place kombu in a saucepan with water and bring to a boil.
- Reduce mixture to a low simmer and allow to simmer for several hours.
- Add stock.
- Return mixture to the boil and then remove from heat
