Welsh Bread Pudding Recipe
- 1/4 c. raisins
- 2 tbsp. brown sugar
- 6 slices bread, cut in half, buttered on one side
- 2 1/2 c. lowfat milk
- 2 Large eggs
- 1/4 teaspoon cinnamon
- 1 teaspoon lemon zest
- Sprinkle half the raisins in 9 x 13 inch pan.
- Add in 1 Tbsp.
- brown sugar.
- Place the triangle slices of bread to overlap each other.
- Mix lowfat milk and egg.
- Pour over bread.
- Sprinkle with remaining raisins, 1 Tbsp.
- brown sugar, lemon zest and cinnamon.
- (You can pour a small amount of cream or possibly half and half over the mix if desired the richer taste.)
- Bake at 350 degrees 30 to 35 min till browned.
- Serve hot.
- Yields 8 servings.
