Light Spicy Cornbread Muffins
- 1 12 cups yellow cornmeal
- 1 teaspoon baking soda
- 12 teaspoon salt
- 1 teaspoon sugar
- 2 egg whites
- 14 cup picante sauce
- 3 tablespoons canola oil
- 1 (8 ounce) carton plain nonfat yogurt
- cooking spray
- Combine first 4 ingredients in a large bowl; make a well in center of mixture.
- Combine egg whites and next 3 ingredients; add to dry ingredients, stirring just until moistened.
- Spoon batter into muffin pans coated with cooking spray, filling two-thirds full.
- Bake at 425 for 18 to 20 minutes.
- Remove from pans immediately.
