For Your Lunch Box Racoon Dog Rice Balls
- 1 rice bowl worth Cooked white rice
- 1 tbsp Tempura crumbs
- 2 tbsp Japanese leek
- 1 tsp Sesame seeds
- 1 pinch Salt
- 1 tsp Soy sauce
- In a bowl, add the tempura crumbs and sprinkle salt and pepper.
- Mix lightly.
- Mix evenly with the rice, do your best not to leave any clumps.
- Add the leeks and sesame seeds and mix again, taste as you go.
- Add salt if necessary.
- Form into a ball or any shape, and it's done.
- If you like, wrap your rice ball with toasted seaweed.
- How to preserve tempura crumbs: When I make tempura crumbs at home, I line a plastic container with paper towels and spread the crumbs on top.
- The crumbs should keep for a week.
