Hearty Vegetable Soup-Low Fat

  1. Boil the tomatoes until the skin comes off.
  2. Blend tomatoes, onion and garlic in a blender with a little bit of water until you get a soft paste.
  3. Set aside.
  4. In a large pot, heat oil and stirfry vegetables for about a minute.
  5. Add tomato paste and keep moving mixture for a few seconds more.
  6. Add water, boullion cube and sprigs of coriander.
  7. Simmer for 3 minutes in medium heat.
  8. Season with salt and pepper and simmer in low heat until vegetables are soft.
  9. Remove coriander before serving.
