Two Potato Roast

• cooking spray
• 1 12 lbs medium red potatoes, scrubbed,cut into 1 inch cubes
• 1 12 lbs sweet potatoes, scrubbed cut into 1 inch cubes
• 18 tablespoon olive oil
• 1 tablespoon chopped fresh rosemary or 12 teaspoon dried rosemary
• 1 teaspoon coarse salt (kosher)
• 18 teaspoon cayenne pepper

1. Preheat oven to 500 degrees F.
2. With cooking spray lightly coat 15 1/2x10 1/2x1-inch jelly roll pan.
3. Add potatoes, oil, rosemary, salt and cayenne.
4. Roast 20 minutes, until potatoes are tender and browned, stirring once.
