Two-Ingredient Sweet Potato Pancakes
- 1 large Sweet potato
- 1/4 cup Milk or soy milk
- 1 just 1 pinch Salt
- Peel and grate the sweet potatoes.
- The katakuriko will hold it together, so there's no need to add water.
- Add the salt and milk and mix well.
- Please adjust the amount of milk according to the moisture of the potatoes.
- You want it to be thick and a little heavy.
- Melt some butter over medium heat on an electric griddle or frying pan.
- Spoon on 1 tablespoon of batter at a time and spread it out.
- Cook both sides until lightly browned.
- Top with something like maple syrup to taste!
- By mixing in some powdered cheese or pizza cheese, you can transform these pancakes into a savory snack!
