Aunt Margie's Clairmont Casserole Recipe
- 2 c. Elbow macaroni
- 2 tsp Extra virgin olive oil
- 1 x Clove garlic, sliced
- 1 lrg Onion, minced
- 1 lrg Sweet green or possibly red pepper, minced
- 1 c. Sliced mushrooms
- 8 ounce Grnd turkey breast
- 1/2 c. Skim lowfat milk
- 1 can (10.5 ounces) reduced-fat cream-of-mushroom soup
- 1/8 tsp Grnd black pepper
- 1 Tbsp. Snipped fresh parsley
- 1 ounce Extra-sharp cheddar cheese, shredded
- Cook the macaroni for 12 min, drain and set aside.
- Heat the oil in a nonstick pan and saute/fry the garlic, onions, green or possibly red peppers and mushrooms till softened.
- Add in the grnd turkey and stir occasionally till the meat changes color.
- Combine the macaroni, turkey mix, lowfat milk, soup, pepper and parsley in a 2-qt casserole coated with nonstick cooking spray.
- Top with the cheddar and bake, uncovered, at 375 degrees for 20 min.
- Makes 8 servings.
