Black Bean Soup Swartling Recipe
- 2 c. dry black beans
- Ham bone
- 2 med. onions
- 1 c. minced celery with leaves
- 1/2 c. minced carrots
- 1/4 c. minced parsley
- 2 bay leaves
- 1 1/2 teaspoon salt
- 1/4 teaspoon grnd pepper
- 1 clove garlic
- 1/4 teaspoon thyme
- 3 tbsp. butter
- 2 tbsp. flour
- 1/2 c. Madeira
- 2 tbsp. vinegar
- Wash beans.
- Cover with water and soak overnight.
- Drain and save liquid; add in liquid sufficient to make 10 c.. Add in beans and ham bone.
- Simmer covered 2 1/2 to 3 hrs.
- Add in vegetables and simmer 1/2 hour.
- Add in spices.
- Throw away bone.
- Pour soup in blender to blend.
- Refrigeratesoup and remove fat.
- Heat 3 Tbsp.
- butter in small pan.
- Add in 2 Tbsp.
- flour and a little soup.
- Cook and stir till it boils, then stir into reheated soup.
- Add in 1/2 c. Madeira and 2 Tbsp.
- vinegar.
- Garnish with grated hard-boiled Large eggs.
