Black Bean Soup Swartling Recipe

  1. Wash beans.
  2. Cover with water and soak overnight.
  3. Drain and save liquid; add in liquid sufficient to make 10 c.. Add in beans and ham bone.
  4. Simmer covered 2 1/2 to 3 hrs.
  5. Add in vegetables and simmer 1/2 hour.
  6. Add in spices.
  7. Throw away bone.
  8. Pour soup in blender to blend.
  9. Refrigeratesoup and remove fat.
  10. Heat 3 Tbsp.
  11. butter in small pan.
  12. Add in 2 Tbsp.
  13. flour and a little soup.
  14. Cook and stir till it boils, then stir into reheated soup.
  15. Add in 1/2 c. Madeira and 2 Tbsp.
  16. vinegar.
  17. Garnish with grated hard-boiled Large eggs.
