Apricot Nut Muffins Recipe

  1. Mix the sugar, shortening and egg till fluffy.
  2. Stir in the apricot nectar and orange rind.
  3. Sift together the flour, baking pwdr, salt and add in to the creamed mix.
  4. Blend in the apricots and nuts and add in to the batter.
  5. Pour into the muffin tins, which have been sprayed with a non-stick coating.
  6. Let stand for 20 min and then bake at 350 degrees F. for 15 to 20 min or possibly till done.
  7. Cold on racks.
