Pumpkin and Pesto Water Crackers
- 500g pumpkin, peeled and sliced into 2 cm pieces
- 1 cup olive oil
- 1 cup basil leaves
- 2 garlic cloves
- 40g pine nuts
- 1/4 cup olive oil
- 2 tablespoons KRAFT* Grated Parmesan Cheese
- salt and pepper, to taste
- 125g CAPTAIN'S TABLE* Water Crackers
- Place the pumpkin on a baking tray and drizzle with the olive oil.
- Bake at 200C for 20 minutes or until the pumpkin is cooked and brown.
- Combine the basil, garlic and pine nuts in a food processor.
- Add the olive oil, Parmesan, salt and pepper; pulse to combine.
- Serve a piece of pumpkin and a dollop of pesto on each Captains Table* Water Cracker.
