Pumpkin and Pesto Water Crackers

  1. Place the pumpkin on a baking tray and drizzle with the olive oil.
  2. Bake at 200C for 20 minutes or until the pumpkin is cooked and brown.
  3. Combine the basil, garlic and pine nuts in a food processor.
  4. Add the olive oil, Parmesan, salt and pepper; pulse to combine.
  5. Serve a piece of pumpkin and a dollop of pesto on each Captains Table* Water Cracker.
