Sparkling Gingerade

  1. In a medium saucepan, combine water, ginger, lemon zest, sugar, honey, mint leaves, and cloves; bring to a boil.
  2. Reduce heat; cover and simmer for 10 minutes.
  3. Remove from heat; cool to room temperature.
  4. Strain into a pitcher; stir in lemon juice.
  5. Cover and refrigerate until chilled, about 3 hours.
  6. To serve, place 3 to 4 ice cubes in tall glasses.
  7. Fill halfway with Gingerade; top with ginger ale, stirring gently.
  8. Garnish with mint sprigs.
